Creamy Kale Pasta Recipe

3 large zucchinis

Olive oil to drizzle

½ Lemon, juiced

Pinch of salt

 

Pesto Ingredients

2 bunches basil

Morlife Certified Organic Kale Powder

1/3 cup green peas

3 clove garlic

50g pine nuts

1/3 cup extra virgin olive oil

1 tbsp. tahini

Salt and pepper to taste

1.   Using a small non-stick pan, gently toast pine nuts then leave aside.

2.   In a food processor, blend basil, garlic, toasted pine nuts, olive oil, tahini paste, salt, pepper and 1 serve Morlife Kale Powder. Ensure ingredients are well combined. Leave aside.

3.   Using a veggie slicer or vegetable peeler, shred your zucchini into spaghetti strands then combine veggie pasta with lemon juice, olive oil and salt. Allow to sit for 2- 3 minutes, this should soften the strands.

4.   Add the pesto sauce to your veggie pasta and mix well.

5.   Serve with a crumble of feta cheese or just as it is.
