1 roasted sweet potato
2 cups salad greens
1/2 cup crumbled feta
2 Tbsp Morlife Goji Berries
1 Tbsp balsamic vinegar
- Preheat oven to 180°C.
- Cut sweet potato into thick rounds. Coat in olive oil and bake for 25-30 mins (until tender) - set aside to cool.
- Cut Halloween faces into sweet potatoes once cooled using a knife or utensil of choice.
- Assemble salad; add greens, feta and goji berries to a large dish. Place spooky sweet potatoes on top and drizzle with balsamic vinegar.
