Quinoa Seafood Paella
3 cups cooked arborio rice
2 packets Morlife Mediterranean Tomato & Herb Risotto
1 teaspoon saffron threads-(optional)
3 tbsp olive oil
1 brown onion finely chopped
3 cloves garlic, crushed
2 tomatoes peeled diced
1 teaspoon sweet paprika
150-200 gms tiger prawns or your choice
50gms squid cut in rings
10-12 mussels
2/3 cup frozen peas
Parsley for topping
Lime wedges
Salt and pepper to taste
Directions
1) Cook quinoa as per packet instruction
2) Cook arborio (1 cup rice is to 1 cup water)
3) Sauteed in a hot pan- garlic, onions, tomatoes and add prawns.
4) Cook for at least 5 minutes before adding squid and mussels-do not overcook as squid and mussles will go rubbery
5) Then add quinoa and rice and make sure to blend well. You can add saffron at this time with salt and pepper for more flavour
6) Sprinkle with parsley and add lime wedges
