They are super easy and are incredibly versatile. You really can’t go wrong with a quinoa bowl; these nourishing meals allow for endless variations and creativeness.
Today we’ve chosen for a ‘hummus’ to be the hero of this bowl. This is not your everyday hummus; inspired by Mediterranean flavours, ours is made with white beans instead of chickpeas and we didn’t use tahini! Creating your own home-made dip has never been so easy. For this dip all you need is white beans, olive oil, roasted red capsicum, lemon juice AND one pouch of our Smokey Barbeque SuperDip Mix.

SMOKEY BBQ HUMMUS QUINOA BOWL
PREP TIME: 30 min
SERVES: 1 large serve
1 can White Beans
2 tbsp. Olive oil
3 pieces Roasted Red Capsicum
Juice of ½ Lemon
½ cup Morlife Certified Organic Tricolour Quinoa, cooked
Handful Baby Spinach
1 Lebanese Cucumber
¼ cup Kalamata Olives, whole, pitted
STEP BY STEP
- Cook Morlife Certified Organic Tri Coloured Quinoa according to package instructions. Set aside to cool.
- In a food processor, add beans, olive oil, roasted capsicums and lemon. Blend until smooth. Stir SuperDip Mix through.
- Assemble the bowl by placing all remaining ingredients and dip together in a bowl, layered or side by side as shown in the picture.
