We’ve found a fun and creative way for you to enjoy your cereal, thanks to these delicious Breakfast Popsicles which is literally breakfast on a stick! Featuring our NEW Goji Antiox Toasted Muesli, these breakfast popsicles provide everything you need from a breakfast meal with protein, fibre plus omega fatty acids. They are perfect for on the go or as a satisfying snack to tie you between meals.

Our brand spanking reformulated Goji Antiox Toasted Muesli contains less sugar and more fibre than the older version. It features the prebiotic; Fructooligosaccharides which has been used along with honey to toast the premium Australian wholegrains and nuts. Providing these popsicles with the best combination of creaminess and crunch, Goji Antiox Toasted Muesli consists of toasted rolled oats, rolled barley, rolled rye and barley brain along with nuts and seeds; almonds, macadamia nuts, chia seeds, sunflower seeds and pepitas. Just to really top it off, we’ve included dried antioxidant rich berries; goji, cranberries and blueberries for that juice bite! We’ve gone and measured the total antioxidant capacity of the cereal compared to other breakfast cereals just to show quality assurance.

Wrapped up in the creamy coconut milk and yoghurt we’ve put in our Monk Fruit Powder for a kick of sweetness without the unnecessary kilojoule content! Unlike no other, Monk Fruit’s sweetness comes from naturally occurring antioxidants called ‘mogrodies’. It’s renowned for its intense sweetness without the bitter aftertaste. Monk Fruit is native to china and has been used in traditional Chinese medicine for centuries, with it’s subtle caramel undertone it is perfect to add into baking and cooking. As Monk Fruit is roughly 10 times sweeter than sugar, a little goes a long way! We only  used ½ level tbsp which gives the sweetness equivalent of 2 heaped tbsp of sugar (24g), the best part? You’re cutting out 23.7g of sugar!!!

For those of you who have dietary requirements but want to enjoy our Breakfast Popsicles, not to worry, only a few little adjustments need to be made. Although no diary or such has been added to our Goji Antiox Toasted Muesli, the wholegrains have been toasted in honey. You can easily replace the cereal with our Gluten Free Goji Antiox Muesli and use maple syrup instead of honey which would make this recipe both vegan and gluten free!

To get started, we recommend making these the night before just so they’ll100% set. Mix up your coconut yoghurt and milk in a bowl along with the Monk Fruit Powder, taste as you go for sweetness (but half a tbsp. should do you fine!). In a separate bowl mix the toasted muesli, honey and coconut oil, this will help the muesli bind together making it easier for your popsicles to come out! Speaking of which- to get them out of their molds, simply run the covered part of the popsicle under warm water and gently pull on the popsicle stick. And just like that you'll have breakfast on the go!

BREAKFAST MUESLI POPSICLES

PREP TIME: 10 mins

FREEZE TIME: 6 hours

MAKES: 6

INGREDIENTS

1 cup coconut yoghurt

½ cup coconut milk

½ level tbsp. Morlife Monk Fruit Powder

1/2 cup Morlife Goji Antiox Toasted Muesli

¼ cup honey, melted in the microwave for 10 seconds

1 tbsp coconut oil, melted

STEP BY STEP

  1. Mix the coconut yoghurt and coconut milk together in a bowl.
  2. Add the Monk Fruit Powder and mix well to combine.
  3. In a separate bowl, add the Goji Antiox Toasted muesli along with the honey and coconut oil, mix to ensure it is incorporated well.
  4. Spoon the Goji Antiox Toasted Muesli in the bottom of the popsicle mold, then spoon in the coconut mixture. Place the popsicle stick in and set in the freezer for at least 6 hours.
