TUNA & QUINOA POKE BOWL

gluten free recipe

PREP & MAKE TIME: 1 hr (marinate time) + 10 mins

SERVES: 2-3

INGREDIENTS

1lb sashimi grade tuna, cubed

MARINADE

¼ cup chopped red onion

3 tbsp tamari sauce

1 tbsp kimchi brine

1 tsp sesame oil

1/2 tsp apple cider vinegar

½ tsp finely grated fresh ginger

1 tsp finely grated garlic

pinch of salt

BOWL

large handful fresh kale

1 cup raw purple cabbage

1 1/2 cup Morlife Tri Colour Quinoa (cooked)

kimchi (to serve)

1-2 avocados 

black sesame seeds and coriander to garnish

 

STEP BY STEP

  1. In a bowl, toss tuna with red onions and scallions. Pour marinade over fish, and give it a good mix, until tuna is glistening with sauce. Cover and let sit in the fridge for at least an hour.
  2. While tuna is marinating, cook Morlife Tri Colour Quinoa, follow packet instructions.
  3. Assemble: over Quinoa, add chilled marinaded fish, avocado, fresh scallion, kimchi, kale, purple cabbage and black sesame seeds. Serve and enjoy immediately.
