Detox your body and sooth your soul with this delicious bowl of body-lovin' goodness. A refreshing combination of zesty broth, rice noodles and crunchy greens, this is a great winter warmer and wellness supporter.
1-2 tbsp olive oil
1 onion, diced
1 tbsp fresh ginger, grated
4 cloves garlic
1-2 tsp Morlife® Certified Organic Turmeric Powder
1 tsp cumin
2 tsp Morlife® Certified Organic Kale Powder
1 carrot, chopped
2 stalks of celery, chopped
4 cups water
500 ml stock
Squeeze of lime juice
1 bunch of bok choy
Rice noodles, cooked
½ cup fresh coriander, to garnish
- Sauté onion in 1-2 tbsp olive oil over medium heat for 5 mins until fragrant and golden. Add ginger & garlic and sauté for 2-3 minutes until garlic is fragrant and golden. Add the turmeric powder, cumin & kale powder and sauté for 1-2 minutes. Stir through carrot and celery.
- Add water and stock. Bring to a simmer. Add citrus to taste. Adjust salt, lime and spice level to your liking. Add bok choy and cooked rice noodles. Garnish with coriander. Enjoy!
