Alkalising Grinch & Protein Reindeer Cupcakes

 

Get creative this silly season with these cupcake-ified characters! Featuring a herd of reindeer led by the Grinch himself, your heart will grow 3 sizes too as your fall in love with these tasty treats.

 

Makes 12 cupcakes

 

Ingredients

 

Cupcakes

  • 1 ½ cups plain flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup softened butter
  • ½ cup raw honey
  • 2 eggs
  • ⅓ cup milk
  • 1 tsp vanilla

Method

 

Cupcakes

  1. Preheat oven to 180°C degrees and grease/line cupcake tray.
  2. Combine the flour, baking soda, baking powder & salt in a medium bowl and set aside.
  3. In a mixing bowl, beat the butter for a minute on medium speed. Add the honey, eggs, milk & vanilla and continue to beat for 3 mins on medium speed.
  4. Turn the mixer to low speed and slowly add dry ingredients until all the ingredients are well combined.
  5. Spoon the batter into the cupcake tray.
  6. Bake for 20 mins or until the top of the cupcakes are slightly brown and a toothpick comes out clean. Allow to fully cool before frosting.

 

Grinch Frosting

  1. In a mixing bowl using an electric mixer, cream together the cream cheese and butter. Alternatively, you can do this by hand if you desire.
  2. When the cream cheese and butter are well combined, add 1 tablespoon Greek yogurt until blended.
  3. Next, add 3 teaspoons of Monk Fruit and 1 teaspoon of vanilla extract. Whip or whisk the frosting for about a minute on medium. Test the frosting for sweetness.
  4. Once frosting is done, split into 3 bowls.
  5. Combine 1 tbsp of Alkalising Greens to one bowl, and red natural food dye to another.
  6. Pipe the green frosting on top of the cupcake, then in a separate piping bag pipe the red to create the hat. In another piping bag, pipe the plain frosting around the bottom of the hat and a small tip at the top.
  7. Add sugar eyes if desired.

 

Reindeer Frosting

  1. In a mixing bowl using an electric mixer, cream together the cream cheese and butter. Alternatively, you can do this by hand if you desire.

  5. Pipe the frosting on top of the cupcake.
