ANZAC Golden Bliss Balls Recipe
Did you know the original ANZAC biscuits were hard as a rock and were known as 'hardtack biscuits'? These biscuits had an extensive shelf-life and sustained soldiers when fresh rations were low. They were nowhere near as tasty as the sweet ANZAC biscuit that we now know and love and were often grated and mixed with water to make a kind of porridge. Over 100 years and many iterations later, these biscuits have morphed into an Aussie staple that continues to connect us to our past. You can read more about the history of ANZAC biscuits here.
We decided to get crafty in the kitchen and do our own take on the classic fam-favourite ANZAC biccy. Perfect for lunchboxes and packed with protein, these bite-sized balls of golden bliss are sure to keep you sustained and satisfied.
PREP & SET TIME: 10 min prep & 1-hour freeze
MAKES: Approx. 10 balls
INGREDIENTS
METHOD
- Combine all ingredients minus the toasted coconut in a food processor. Blend until combined and smooth in consistency.
- Roll mixture into small balls then coat in the toasted coconut.
- Place balls in the freezer for one hour and then enjoy!
* Make these gluten-free by swapping the oats for quinoa flakes!
