Greens Mexican Quinoa Bowl
1 brown onion, diced
1 garlic glove, minced
1 tsp. cumin powder
1 tsp. oregano powder
1 Handful of fresh coriander, finely cut
1 tsp. olive oil
1 tomato diced
½ tsp. Morlife Certified Organic Kale Powder
1 cup Morlife Certified Organic Quinoa Grains
1/2 red onion, thinly sliced
3 limes, cut into wedges
Directions
- Cook Quinoa according to packet instructions.
- In a saucepan, sauté onion, garlic, cumin and oregano in oil until browned.
- Add tomato and kale powder and stir until tomato is warmed.
- Serve tomato mixture with kale, cooked quinoa, red onion, coriander and lime wedges.
