If only we could still have our fudge and eat it too, without feeling mildly nauseous from all that sugar. That’s where we’ve stepped in, with our guilt free Peanut Butter Vanilla Fudge recipe – so indulgent you’ll feel like you’re being naughty. These bite size pieces of heaven are full of healthy fats and protein making it the perfect energy boosting snack and also makes for delicious keto fat bombs.

This 4 ingredient recipe is so easy to make you’ll probably find yourself making it non stop like us. What’s so great about this fudge is it’s free from refined sugar, vegan friendly and is gluten free so there’s no excuse not to love everything about it – but how can you not love anything involving peanut butter, right?

This couldn’t be vanilla fudge without our Vanilla Fudge Plantiful Protein, of course. Not only does it give the fudge the irresistible vanilla/caramel-like flavour but also adds protein to keep you feeling full and aids the body in its healing process during the day. Let’s not forget all the essential minerals and amino acids our Plantiful Protein is packed with too.

The Holy Grail peanut butter and the creamed coconut butter are used to make the fudge rich, smooth and creamy while also providing healthy fats that minimise sugar peaks and contribute to longer satiation, keeping you full and satisfied. The combination of fats from the peanut butter and coconut butter are definitely a keto power couple.

In a food processor blend the peanut butter, creamed coconut butter, maple syrup and Vanilla Fudge Plantiful Protein together and pour the mixture into a silicone baking tray. If you want to add a bit of crunch, top the fudge off with walnuts and place the tray in the freezer for around an hour or until the mixture is firm and set. The next step is our favourite – taking it out and demolishing it in one mouthful.

KETO VEGAN PEANUT BUTTER VANILLA FUDGE

 

 

 

INGREDIENTS

4 tbsp peanut butter (smooth)
3 tbsp creamed coconut butter
2 tbsp maple syrup
1 scoop Morlife Plantiful Protein Vanilla Fudge

DIRECTIONS

  1. Blend everything together in food processor.
  2. Pour into a silicone-baking tray, top with walnuts, and freeze for 1 hour.
  3. Take out and enjoy (keep stored in the fridge).
