Lucuma and Banana Cake with Coconut Icing
Ingredients:
4 eggs
1/4 cup coconut oil
1 teaspoon vanilla essence
2 tbp maple syrup
1/2 cup Morlife Certified Organic Lucuma Powder
1/4 cup coconut flour
1/2 cup almond meal
2 tsp baking powder
Pinch of salt
1 ripe bananas mashed
Meringue:
4 egg yolk
1 tbsp coconut sugar
1 tsp vanilla essence
Caramelised Banana:
1 banana sliced
1 tbsp butter
2 tbsp coconut sugar
Directions
Cake:
1. Beat eggs, coconut oil, vanilla and maple syrup in a medium sized bowl.
2. Add dry ingredients and mix
3. Fold in mashed banana
4. Spoon mixture into a cake tin and cook on a moderate oven for 30 minutes until golden brown
Meringue:
1. Beat egg whites, coconut sugar and vanilla in a bowl until mixture forms peaks
Caramelised Banana:
1. In a ban heat butter and sugar
2. Add banana slices and cook for 30 or less seconds
Assembly:
1. Allow cake to cool
2. Add meringue on top of cake and cook for 10 minutes until top of meringue is light brown
3. Decorate with carmelised banana
