Maple Pecan Granola
If we could take one thing to a desert island, it would hands down be this crunchy, munchy Maple Pecan Granola. We're talking toasted golden brown oats, nuts, grains and raisins strewn with ribbons of sweet maple syrup and spicy cinnamon. What more could you possibly need?

Ingredients
¼ cup Morlife Certified Organic Quinoa Grain2 cups rolled oats
½ cup chopped pecans
2 tbsp shredded coconut
¼ cup maple syrup
1 tbsp honey
1 tsp cinnamon
½ tsp vanilla extract
¼ cup raisins
Method
- Preheat oven to 180°C. Line a baking tray with baking paper.
- Place quinoa in a small resealable plastic bag. Roll over it with gentle pressure a few times with a rolling pin to crack the seeds. Pour the quinoa into a medium bowl and stir in the oats, pecans and coconut.
- Whisk together the maple syrup, honey, cinnamon and vanilla extract; pour over quinoa mixture. Mix until completely coated. Pour onto baking sheet, spread it out in an even layer and bake for 10 minutes. Stir, then bake again for another 5 minutes. Stir again and bake for 3 to 5 minutes. Granola can quickly burn so watch it closely. It should be golden brown. Remove from the oven, stir in raisins and let cool. Enjoy!
