Strawberries & Cream Vanilla Protein Pikelets

You know it’s going to be a good day when pikelets are on the menu for breakfast! Especially when they are 100% clean, healthy and packed with protein. These delicious babies are gluten free and feature our Vanilla Whey Protein Concentrate making them taste extra creamy and delicious plus they provide at least 12g of protein per serve!

Bound to impress and satisfy dad this Father’s Day, all you need is 20 minutes. Start by making the oh-so-delicious strawberry cream by processing the ingredients (besides chia seeds) together in a blender (don’t forget to reserve 3 strawberries for the topping). If you want it to taste creamier, you can use vanilla yoghurt. However, the addition of Monk Fruit Powder adds a burst of natural sweetness (did you know that Monk Fruit Powder is 10x sweeter than sugar? So a little goes a long way). Once you’ve made the strawberry cream, add in the chia seeds, this will thicken it up a bit. Set aside in a small jug or bowl and now it’s time to start on the main attraction!

Strawberries & Cream Vanilla Protein Pikelets

To make the pikelets, simply combine all the ingredients together in a bowl, making sure you’ve mashed the banana before adding the other ingredients. Mix the pikelet ingredients altogether so that you have a nice smooth consistency, then its time to cook them up.

Cook the pikelets until both sides are golden on a coconut oiled skillet. Whilst they’re cooking, slice up your reserved strawberries. Serve the pikelets with the strawberry cream & fresh strawberries & pomegranate seeds…YUM!!

STRAWBERRIES & CREAM VANILLA PROTEIN PIKELETS

PREP & COOK TIME: 20 minutes

SERVES: 2 (makes 8 small pikelets)

INGREDIENTS

Protein Pikelets
1 banana
1 egg
1 scoop Morlife Vanilla Whey Protein Concentrate
1 tbsp coconut oil
1 tbsp fresh pomegranate seeds (optional)

Strawberry Cream
1/3 cup natural yoghurt
1 tsp Morlife Monk Fruit Powder
1 punnet strawberries (reserve 3 for topping)
1 tbsp Morlife Certified Organic Chia Seeds

 

 STEP BY STEP

  1. Blend strawberry cream ingredients in a blender until smooth and creamy, place in a small jug and set aside.
  2. Mash banana, add egg and whisk, add protein powder and mix until you have a smooth consistency. 
  3. Heat coconut oil on a skillet, Place 2-3 tbsp of pancake batter on the pan and cook until both sides are golden, continue this process until the batter has gone. 
  4. Slice the 3 strawberries and serve pikelets with the strawberry cream, fresh pomegranate seeds & sliced strawberries.
