Sugar-free Peanut Butter Shortbread Cookies
We have given you another reason to love Morlife Monk Fruit Powder thanks to these to-die-for cookies which contain no sugar!! That’s right you read correctly: crumbly, delicious cookies free from sugar, and while we’re on that note, they’re also gluten free!
If you’re unfamiliar with Monk Fruit Powder, it’s simply a fruit native to China which contains naturally occurring antioxidants. It’s these antioxidants, called ‘mogrosides’ which give Monk its intense sweet taste, without the bitterness!
These irresistible cookies are super easy to whip up, all you’re going to need is a baking tray, a bowl and a big mixing spoon! Once you’re done mixing all the deliciousness together, its time to start forming these cookies! We made roughly 15 small cookies (so this makes it ok to snack on 2 at a time right?!). Once you’ve placed them on a tray, you want to flatten them out using your hands or a fork. You can make a grid like pattern with the fork or even get creative and do some other cool shapes or patterns!
Pop them in the oven for 18 minutes, they won’t need to brown, once they’re done let them cool down before enjoying. You can store them in a sealed container for up to a week (if they even last that long!!)
Peanut butter lovers read here!: If you’re a peanut butter lover like us, don’t fully mix the peanut butter, keep up slightly chunky to make the cookies taste even more delicious and peanut buttery!
Note: this recipe is pretty versatile too, if you want to replace the peanut butter for other nut butters you have in your pantry that’s completely fine! Almond butter would definitely do the job!
SUGAR-FREE PEANUT BUTTER SHORTBREAD COOKIES
PREP TIME: 10 min
BAKE TIME: approx. 18 min
MAKES: approx. 15
INGREDIENTS
1/2 Cup Almond Flour
1/2 Cup Gluten Free All-Purpose Flour
1½ Eggs
1 cup Peanut Butter, creamy
1 tsp. Baking Powder
1 1/2 level tbsp. Morlife Monk Fruit Powder
1 tsp. Vanilla Extract
STEP BY STEP
- Preheat oven to 175°C. Line a tray with baking paper.
- Add all ingredients to a mixing bowl, then combine and knead with hands.
- Roll dough into approx. 15 balls and place onto lined tray.
- Flatten balls of dough with your hands, then press a grid pattern into the cookies with a fork.
- Bake in oven for approx. 18 minutes (cookies do not need to brown). Let cool entirely before eating.
