Vegan Falafel Pita Supreme

Serious question: Is there ever a time a pita pocket is not appealing? Weekday, weekend, breakfast, lunch, feeling lazy or conversely, super creative - the humble pita pocket is always an enticing, delicious and ultimately satisfying option. This vegan friendly Hemp Falafel Pita though, has got to be one those classic combinations that will never tire in our books.

The falafel's are created using our new Hemp Falafel Mix which among other things contains a heap of plant based protein, iron, and fibre! Simply whip up the falafels, slice your veggies and you'll be ready to start assembling your pita pockets. For this recipe we suggest pan frying your falafels in coconut oil so they are a little more crisp inside the pita pocket.

Assembling a pita pocket can virtually be done with your eyes closed so we're sure there's no guidance needed there. The tough part with be making sure you can fit everything in that you want! The variety is literally endless so if there's something you want to swap in or think would go perfect in them then go for it! The end result is going to be something wholesome and nutritious.

VEGAN FALAFEL PITA SUPREME

SERVES: 4

PREP & COOK TIME: 30 mins

INGREDIENTS

100 mL water
Coconut oil
1/2 packet Morlife Hemp Falafel Mix
2 tbsp. Morlife Cert. Org. Hulled Hemp Seeds
4 pita pockets (we used smaller sized ones)
4 mushrooms (thinly sliced)
1 red onion (thinly sliced)
1 avocado (thinly sliced)
1 cup of purple cabbage (thinly sliced)
4 radishes (thinly sliced)
fresh coriander (to taste)
2 tbsp. balsamic vinegar
1 tbsp. maple syrup
1 lime
Store bought hummus

STEP BY STEP

Hemp Falafels:

  1. In a bowl, combine falafel mix (100g) with 100 mL of water
  2. Allow water to absorb for 5 minutes and stir again
  3. With damp hands, shape falafel mix into small to medium balls
  4. Shallow fry falafels over medium heat in a pan with melted coconut oil
  5. Turn the falafels so all sides are evenly browned. Cook falafels for approx. 10 minutes

Pita + Filling:

  1. In a sauce pan, add balsamic vinegar, maple syrup, mushrooms and red onion
  2. Let it cook for 5 minutes
  3. To assemble, toast the pitas, cut open and smear with hummus
  4. Place all the other ingredients inside and top with coriander and hemp seeds
  5. To finalise squeeze some drops of lime juice on the top (to taste)
