Festive Pesto Zoodle Salad
Enjoy oodles of noodles without oodles of carbs with this veggie-loaded dish that’ll make regular spaghetti easy to forghetti. Wonderfully flavoursome and delightfully light, this is the vegetarian meal that’ll please any crowd this Christmas.
Ingredients
500g zucchini noodles
1 jar pesto
1 cup baby spinach
1 cup fresh basil leaves
100g crumbled feta
2 tbsp Morlife Hemp Seeds
1/4 cup sundried tomatoes
Method
- Mix zoodles with pesto.
- Add baby spinach to serving plate. Add zoodle pesto mixture on top. Add crumbled feta, hemp seeds, sundried tomatoes and fresh basil leaves to serve.
