Festive Pesto Zoodle Salad

 

Enjoy oodles of noodles without oodles of carbs with this veggie-loaded dish that’ll make regular spaghetti easy to forghetti. Wonderfully flavoursome and delightfully light, this is the vegetarian meal that’ll please any crowd this Christmas.


Ingredients

500g zucchini noodles

1 jar pesto 

1 cup baby spinach

1 cup fresh basil leaves

100g crumbled feta 

2 tbsp Morlife Hemp Seeds 

1/4 cup sundried tomatoes 

 

Method

  1. Mix zoodles with pesto.
  2. Add baby spinach to serving plate. Add zoodle pesto mixture on top. Add crumbled feta, hemp seeds, sundried tomatoes and fresh basil leaves to serve.
