Caramel Goo Halloween Cookies

Spooky black and oozy caramel centres - we love this Halloween inspired treat! Although the black colour may be a little deceiving, these are actually chocolate cookies packed with antioxidants thanks to the Organic Cacao powder and the Monk Fruit powder inside. 

When we first tried this recipe we thought we'd be our healthy selves and add some turmeric to the caramel because we're all about the 80/20 rule. But it just didn't work and the turmeric earthiness that we so love in our lattes and curries just sabotaged the sweetness of the caramel and abandoned it for our next attempt. Something you'll also love about this recipe is the seriously easy caramel sauce it takes to make! 

The secret to the soft centres is creating a well in the cookie before baking then covering the filled well over with dough. Shape the cookies by hand, leaving them deeper to make a well in.  

Halloween Caramel Goo Cookies

Makes 15 Small Cookies
40 Minutes  

Cookie Mix
1 Cup Salted Butter, Room Temperature
2 Tsp Morlife Monk Fruit Powder 
1 Egg
1 Tsp Vanilla Extract
1 1/4 Cups All Purpose Flour
1/2 Cup Morlife Organic Cacao Powder
1-2 Tbsp Charcoal Powder
1 Tsp Baking Soda

Caramel Sauce

1 Tin Coconut Cream
1 Tbsp Brown Sugar

Method

  1. Preheat oven 180 degrees celsius.
  2. Cream butter and monk fruit together until light and fluffy, about 3-4 minutes.
  3. Mix in egg and vanilla extract.
  4. Add flour, cacao and baking soda and mix until well incorporated and thick.
  5. Add charcoal powder last and mix combine thoroughly. Chill cookie dough while you prepare the caramel sauce.
  6. In a sauce pan over medium heat, add coconut cream and brown sugar. Stir to combine and simmer to thicken sauce. Remove from heat once a thick consistency.
  7. Make balls of dough about 2 tbsp in size.
  8. Breaks balls of dough in half, create a well and add caramel sauce to the middle, then press dough halves back together and seal edges.
  9. Place the balls in the fridge for 20-30mins.
  10. Place cookies on a baking paper and sprinkle with sea salt.
  11. Bake for 10-15 min. Enjoy!
