Our Drizzle-Over-Everything Vegan Lucuma Sauce
When we were creating our take on the perfect Mother's Day breakfast, we wanted to add a little somethin'-somethin' to make it irresistible...
We had no choice but to reach for the Lucuma.
This unsung South American superfood boasts a full-bodied maple/caramel flavor and a range of benefits including being a source of zinc, calcium, vitamin C, niacin (vitamin B3) protein, iron, and Lucuma is particularly high in beta-carotene. Not to mention it's Certified organic!
We drizzled this moreish sauce over 2 different versions of Gluten-free Crepes, one Vegan and one flourless - both delicious!
This sauce is super simple and adds a wow-factor to any sweet dish or dessert.
VEGAN LUCUMA SAUCE
GF, V, Paleo
INGREDIENTS:
½ cup Coconut cream
½ cup Medjool dates, pitted & soaked in hot water for 30mins
½ tsp. Sea salt
2 tbsp. Morlife Certified Organic Lucuma Powder
1 tsp. Cinnamon
1 tsp. Vanilla essence
DIRECTIONS:
- Blend all ingredients in a blender or food processor.
- Hint: If it’s too thick or your dates are not soft, add more coconut cream and/or a tablespoon of coconut oil
- Drizzle this flavorsome caramel sauce to your favourite yogurts, fruits, crepes, cakes and more.
