Brace yourselves, because we have created the perfect portion controlled treat! We bring you our Raw Cheesecake Bites, which to be honest are more like individual cakes, but bites sound cuter!
Both gluten free and vegan, this is the perfect treat to bring along to dinner parties, birthday parties or shared lunches. Better yet, we’ve put in some super power ingredients to provide added nutritional benefits. This includes our Morlife Certified Organic Camu Camu Powder. As strange as its name may sound, Camu Camu is one of the best superfoods to support your immune system naturally thanks to its vitamin C content. In just one 5g serve, you’ll be getting a whopping 438% of your daily intake of Vitamin C. As you probably already guessed it, Camu Camu has a mild citrus flavour which works wonders in our Cheesecake.
Before starting, spray a cupcake mould. We used a silicon mould to make it easier to pop them out, we highly recommend this. You’ll also need yourself a food processor. Start by adding in your base ingredients and process until the ingredients stick together. If you find its not sticking together, not to worry, just add a dash of coconut oil. Press the mixture into your mould, roughly 3 tablespoons should be enough.
A few tips for the Cheesecake layer; we recommend soaking the cashews in hot water for 20 minutes to soften them up a little. This will create a smoother and creamier cheesecake filling. You can also leave the coconut milk in the fridge prior to adding it in the recipe; this will just make your filling a little thicker in texture. If you like your cheesecakes to be strong in citrus flavour, you can double the amount of Camu Camu Powder; this will also cut through the sweetness and give it a nice balanced taste. Pour the filling over top of the base then pop it in the freezer to set.
To make the Berry Compote, add all your ingredients in a saucepan. We’ve used our Morlife Certified Organic Chia Seeds to thicken up the mixture. Chia Seeds are a fantastic little superfood that has the unique ability to gel in the presence of liquid, creating that desired jam consistency for the compote. Our Chia Seeds provide a source of fibre and omega-3 fatty acids and are extremely versatile to enjoy. We love using them in smoothies as well. Once the texture of the compote has thickened up, allow it cool to room temperature before placing it in the fridge.
After 4 hours, your cheesecakes should be ready to enjoy. We placed a dollop of the berry compote on top along with our delicious Morlife Dried 5 Berry Mix which includes a selection of Goji Berries, Tart Cherries, Blueberries, Cranberries and Strawberries.
Ingredients
Base
1/2 Cup Almonds
1/2 Cup Shredded Coconuts
1/2 Cup Pitted Medjool Dates
Cheesecake layer
1 ½ Cups Cashews (soaked on hot water for 20 minutes)
1 Tsp Morlife Certified Organic Camu Camu Powder
1/3 Cup Coconut Oil
½ Cup Full Cream Coconut Milk
½ Cup Maple Syrup
Berry Compote
½ Cup Fresh or Frozen Raspberries/Strawberries
1/3 Cup Rice Malt Syrup
1 Tbsp Morlife Certified Organic Chia Seeds
Morlife Dried 5 Berry Mix
Directions
- Cut baking paper into a rectangle and place in a muffin tray so that there are tabs either side.
- Add the base ingredients in a blender and process until the consistency is able to stick together. Press into the muffin tray and set aside.
- Add the cheesecake layer ingredients in a blender and process until smooth and creamy, pour into the muffin tray and freeze for 4 hours (best overnight).
- Place the ingredients for the berry compote in a saucepan and simmer for 10 minutes until you have a syrup. Transfer to a bowl and allow to cool in the fridge.
- Top Cheesecake bites with a spoonful of the berry compote and top Morlife Dried 5 Berry Mix and serve.
