5 Ingredient Chocolate Crackle Nests
Who doesn’t love chocolate crackles?! Doesn’t it just take you back to your childhood birthday party days? We figured they are the perfect festive recipe for Easter and definitely something fun to make with kids.
Many of the chocolate crackle recipes we are used to unfortunately have little or no nutritional value and are packed with sugar. We decided to make our own healthier version which contains no added sugar!
We’ve used brown rice puffs for the crackle part. For the deliciously chocolatey-ness, we’ve used our Certified Organic Cacao Powder, our favourite decadent Amazonian superfood. Cacao Powder comes from the fruiting tree and is the most well known source of all chocolate and cocoa products. Our Certified Organic Cacao Powder is processed at low temperature to maintain its antioxidants and other nutrients.
To sweeten our Chocolate Crackle Nests, we’ve used our Monk Fruit Juice Powder. We definitely can’t get enough of Monk Fruit, if you haven’t heard of it before (though we've literally been raving about it for years) it’s renowned for its intense sweetness without the bitter after taste. We haven’t even gotten to the best part yet- its sweetness actually comes from naturally occurring antioxidants called ‘mogrosides’. It’s these sweet little compounds that make it so easy for you to naturally sweeten any recipe without even adding sugar- it can’t get much better than that!
Before starting, spray a muffin tray with coconut oil spray. We used a silicon tray which makes it easier to get the crackles out but a regular baking tray is fine too. Simply combine all the crackle ingredients in a bowl, mixing well to ensure the rice puffs are evenly coated. We suggest adding the Monk Fruit Juice Powder in slowly, and having a little taste in between to test the sweetness. You can add more or less Monk Fruit depending on your preference. Once the ingredients are well combined, spoon the mixture into the cupcake moulds. Once you’ve done that, use the back of the spoon to create a little well in the middle of the crackle nest (this is where you’ll be placing the chocolates!). Place the tray in the fridge to set, we left ours overnight, but 2 hours should be enough (just test it before you take it out completely). If you find it difficult to get your chocolate crackle nests out, run the bottom under hot water then remove starting from the edges with a knife.
To create the delicious chocolate eggs, we’ve chosen our irresistible Dark Chocolate 5 Berry Mix, they contain 5 super berries; Goji Berries, Tart Cherries, Blueberries, Cranberries and Strawberries which have been coated in premium dark chocolate. Our Chocolate 5 Berry Mix is packed with antioxidants and is also gluten free!
Note: If you wanted this recipe to be vegan, simply omit the Dark Chocolate 5 Berry Mix and use our Dried 5 Berry mix instead! Less chocolatey, but you'll be getting that fruity goodness.
Ingredients
1/2 Cup Morlife® Certified Organic Cacao Powder
1/2 Cup Coconut Oil, Melted
3 Tbsp Morlife® Monk Fruit Powder
1 ½ Cups Brown Rice Puffs
Handful Morlife® Dark Chocolate 5 Berry Mix
**Makes 8 Crackle Nests
Method
- In a large bowl, mix in the cacao, coconut oil and monk fruit until well combined.
- Pour in the rice puffs and stir well until the rice puffs are completely coated.
- Place 2-3 spoonfuls of the chocolate crackle mixture in an oiled silicon muffin tray. Make a small well in the center of the crackles using the back of a spoon.
- Place in the freezer for 2 hours to set.
- Decorate with Chocolate 5 Berry Mix.
