Greens Mexican Quinoa Bowl

1 brown onion, diced

1 garlic glove, minced

1 tsp. cumin powder

1 tsp. oregano powder

1 Handful of fresh coriander, finely cut

1 tsp. olive oil

1 tomato diced

½ tsp. Morlife Certified Organic Kale Powder

1 cup Morlife Certified Organic Quinoa Grains 

1 bunch kale, roughly chopped

1/2 red onion, thinly sliced

3 limes, cut into wedges



  1. Cook Quinoa according to packet instructions.
  2. In a saucepan, sauté onion, garlic, cumin and oregano in oil until browned. 
  3. Add tomato and kale powder and stir until tomato is warmed. 
  4. Serve tomato mixture with kale, cooked quinoa, red onion, coriander and lime wedges.
