Make Your Christmas A Little Bit Fancy With These Nice & Easy Gazpacho Recipes

Australian Christmas is all about sunshine, blue skies, a game of cricket in the backyard or enjoying a nice dip at the beach. Yes, we are lucky enough to have a summer Christmas, so what better way to start your Christmas lunch with something refreshing and light.

We bring you our Christmas Gazpachos!

What is that you may ask? Originating from southern Spain, gazpacho is a soup made of raw blended vegetables and is served cold in vérines (like a shot glass!). Before you start getting weirded out about cold soup we promise you gazpacho is the perfect way to start a Christmas feast. It's light, refreshing and totally tasty. Getting into the Christmas spirit, we made 2 flavoursome gazpachos; one red and one green (each variety will serve around 4 people each depending on your serving glass size). Both gazpachos are vegan and the red gazpacho is gluten-free too. Bursting with spice and flavour, they will be sure to impress your guests.

Another reason why you’re going to love this recipe - it can easily be prepared in advance leaving you less stressed on Christmas morning. Featuring our SuperDip Mix Range, which packs in a heap of flavour, we can assure you, this recipe won’t miss out on flavour!  

In our red gazpacho, we’ve used our Smokey Barbeque SuperDip Mix. Featuring antioxidants, beetroot, goji and chia seeds, our SuperDip is free from additives and packs in a heap of flavour. We added 2 tbsp in our recipe which gave the perfect kick of flavour for our gazpacho. Be sure to keep the remainder in a ziplock bag in the pantry. You can keep it handy for dips, spice mixes for chicken or vegetables plus more.

We used our Spinach, Herb & Onion SuperDip Mix in the Green Gazpacho to create the delicious ‘basil pesto’ like flavours. Packed with probiotics, chia seeds, spinach, kale and spirulina, you’ll be feeling great knowing you’re getting your daily dose of greens! Super easy to prepare, it’s just a matter of blending the ingredients together. We started off by adding the Red Gazpacho ingredients in a food processor, pulsing slowly then adding in the liquids. Blend until smooth then transfer into a large bowl and allow to cool in the fridge, the colder it is the more refreshing!

The same method applies for the Green Gazpacho, simply blend the ingredients together and transfer to a bowl, place in the fridge to cool.

After around 2 hours, you can pour your gazpachos into your vérines. Serve as a deliciously refreshing appetizer to excite your taste buds for what’s about to come!   

RED GAZPACHO

MAKE TIME: 2 hrs 20 min (including chill time)

SERVES: 4+

INGREDIENTS

4 ripe tomatoes
1 clove garlic
½  cucumber
1 red capsicum, chopped
½ brown onion, chopped
¼ cup olive oil
1/3 cup red wine vinegar
1 tsp balsamic vinegar
2 tbsp Morlife Smokey Barbeque SuperDip Mix

 

STEP BY STEP

  1. Add the first 5 ingredients to a food processor, pulse, then slowly add in the oil and vinegar. Blend until smooth.
  2. Add in the SuperDip Mix and blend further until the texture is creamy.
  3. Pour into a large bowl and place in the fridge for at least 2 hours before serving.

GREEN GAZPACHO

MAKE TIME: 2hrs 20 mins (including chill time)

SERVES: 4+

INGREDIENTS

½ cucumber
1 stalk  green onion
1 clove garlic
½ green jalapeno
handful spinach
handful basil
1 cup water
1 avocados
½  heaped tsp. Morlife Alkalising Greens Lemon Lime
2 tbsp. Morlife Spinach, Herb & Onion SuperDip Mix
½ lemon, juiced
3 tbsp olive oil
salt & pepper to taste

 

STEP BY STEP

  1. Finely chop the cucumber, onion, garlic and jalapeno in a food processor, then place in a large bowl.
  2. Process the fresh spinach and basil and add to the bowl, add the water and stir to combine all the ingredients.
  3. Add the mixture (from the large bowl) into the food processor; place the avocado, Alkalising Greens, lemon, olive oil and salt & pepper. Process until smooth.
  4. Pour mixture into the bowl; stir well to combine the contents then place in the fridge to chill for at least 2 hours before serving.

*Although the recipe is free from gluten, Alkalising Greens contains a very small amount of gluten in Barley Grass & Wheat Grass
