3 large very ripe bananas
½ cup melted coconut oil
¼ cup almond milk
1 tsp. vanilla extract
½ tsp. salt
½ tsp cinnamon
1 ¾ cups whole wheat flour
1 regular banana, sliced
½ cup walnuts
Preheat the oven to 175°C and grease a banana loaf pan, set aside.
In a food processor, add bananas and process until smooth and creamy. Add coconut oil, eggs, almond milk, Morlife Lucuma powder, vanilla extract, salt, cinnamon and whole wheat flour and process until well combined.
Pour mixture into a banana loaf pan, add the cranberries and half of the walnuts and mix well with a spoon to disperse evenly.
Bake for 1 hour in the oven or until a knife inserted into the centre comes out clean.
Whilst banana bread is baking, fry banana slices in coconut oil on a saucepan until golden brown.
Place the sliced bananas and remaining walnuts on top of the banana bread and serve.
