Turmeric Acai Raw Cheesecake
Featuring our new Inulin Plus for added natural dietary fibre, this raw cheesecake is loaded with superfood goodness including Certified Organic Turmeric and Certified Organic Acai powder.
TURMERIC ACAI RAW CHEESECAKE
PREP TIME: 1 hr 20 min (including freezing time)
SET TIME: 1 hr
3 Tbsp. Coconut oil
350g cashews (soaked for 1 hour)
34g coconut butter
50g coconut oil, melted
1 tbsp. fresh ginger
2 tbsp. Morlife Certified Organic Turmeric Powder
2 tbsp. lemon juice
100g maple syrup
½ cup water
½ lemon zest
½ tsp vanilla extract
1 tsp Morlife Certified Organic Inulin Plus powder
1 tbsp. coconut oil, melted
½ cup water (add more if the caramel is too thick)
1 tbsp. Morlife Certified Organic Acai Powder
½ cup Morlife Chocolate Coated Macadamia Nuts
½ cup fresh blackberries
STEP BY STEP
- Add base ingredients to a food processor and process until a sticky, crumbly mix forms. Press the base into a 15-20cm round cake tin.
- Add filling ingredients to a food processor and process until smooth and creamy. Pour on top of the base and allow to set in the freezer for 30 minutes.
- Add caramel ingredients to a food processor and process until smooth. If mixture is too thick, add more water. Pour on top of the filling and place back in the freezer for 30 minutes.
- Top with Chocolate Coated Macadamia Nuts and fresh blackberries and serve.
