1 Whole cauliflower, leaves removed
1 tsp. Cumin Powder
½ cup Olive oil
1 bunch Garlic cloves
Lemon Juice from ½ lemon
1 tsp. Seeded Mustard
1 tbsp. Tahini
1 tsp. maple syrup
Small handful fresh Coriander
1. Preheat oven to 200°C.
2. Mix together turmeric, cumin, salt and whisk into olive oil. Using a pastry brush, cover whole cauliflower with the turmeric oil.
3. Bake in oven in a dish with a lid (or cover with foil), placing the whole garlic in the bottom of the dish. Bake covered for 30 minutes, remove cover and bake for another 45 minutes or until golden brown and easily pierced with a knife.
4. Meanwhile, mix dressing ingredients and chop coriander.
5. Serve cauliflower whole topped with dressing drizzled over and a sprinkle of freshly chopped coriander.
