kale carrot goji salad recipe

"This salad is one of my ultimate favourites - full of crunchy carrot, kale, sweet pomegranate, goji berries and crunchy almonds - then dressed with my ultimate sweet tahini dressing. I have this salad (nearly) everyday, and honestly never tire of it. FOR THE SALAD:

4-5 carrots, peeled with a julienne peeler

3 cups curly kale, finely chopped

1/2 cup Morlife Goji berries, soaked for 10-15 minutes to soften

1/2 cup pomegranate arils (if you can't buy fresh, use Morlife Freeze Dried Pomegranate arils instead)

1/2 cup roughly chopped almonds

Juice of 2 lemons

SWEET TAHINI DRESSING:

3 tbsp hulled tahini

4 tbsp maple syrup or coconut nectar

4 tbsp apple cider vinegar 

1/4 tsp sesame oil

1/2 tsp salt (or to taste)

1/4 tsp cracked black pepper 

1. To make the dressing simply whisk together all ingredients and set aside 

2. Toss together the salad ingredients in a large bowl with the lemon juice

3. Combine both the salad and dressing. Enjoy immediately or cover and keep refrigerated until ready to serve
