Being in the Southern hemisphere, we are lucky enough to enjoy Christmas in the summer, and this definitely has an impact on the foods we enjoy on Christmas day. To get into the true Australian spirit, we’ve got the perfect summer Christmas dessert for your lunch! A delicious Nice Cream Cake Pudding, that you’re absolutely going to love. This dessert is both vegan and gluten free allowing all dietary requirements to enjoy it.
Super easy to prepare, this dessert can be made in advance, because we all know there’s enough to be done on Christmas morning if you are hosting a house full of guests! Our scrumptious Nice Cream Cake Pudding consists of 2 creamy fruity layers topped with a delicious chocolate drip. Garnished with our favourite fruits, we think it looks a vision! The best part about this recipe is that it contains no added sugars (we’ve used our very on Monk Fruit Powder plus the sweetness from natural superfoods). Before you start, make sure you have frozen bananas in the freezer ready to go.
For the mold of our Nice Cream Cake Pudding, we’ve used a large salad bowl. You’ll want to line it with gladwrap (this will make it much easier to take out).
The first layer will be the strawberry nice cream, which is oh so creamy and delicious. As mentioned above, we’ve used our Morlife Monk Fruit Powder as a natural sweetener. Monk Fruit Powder is rather unique as its’ sweetness comes from naturally occurring antioxidants which are called ‘mogrosides’. Monk Fruit Powder is renowned for being sweet without having the bitter after taste; it has actually been used in traditional Chinese medicine for centuries! Blend the strawberry nice cream layer until smooth and creamy, you can add more almond milk if you’re finding the texture to be too icy. Pour the strawberry layer into your lined bowl, smoothing out the surface using a back a spoon. Place this in the freezer for at least 1 hour before placing on the next layer.
Featuring our Morlife Certified Organic Lucuma Powder, our next layer is a delicious Lucuma Vanilla Nice Cream. An exotic fruit from Peru, Lucuma Powder is a fantastic natural sweetener alternative- it only contains 13.3% sugar, it also provides a source of fibre. The taste of Lucuma can be compared to the likes of butterscotch and caramel, hence why it’s perfect in ice cream- in Peru it is known is the most popular ice cream flavour! Once you’ve blended all your ingredients together, pour it on top of your strawberry nice cream layer and place in the freezer. Smooth around the edges using the back of a spoon and allow it to freeze overnight.
The final component of this dish is the heavenly chocolate drip. It tastes so good and is super easy to make, we’ve used our Morlife Certified Organic Cacao Powder to provide that delicious natural chocolate taste. Our Cacao is processed at low temperatures to ensure nutritional potency and contains antioxidants. To make making your chocolate drip, simply combine the ingredients together. Don’t worry if it’s too runny, as soon as it hits your ice cream pudding it will freeze instantly!
We garnished the top of our Nice Cream Pudding with our delicious Morlife Dried 5 Berry Mix. The mix combines an assortment of Goji Berries, Tart Cherries, Blueberries, Cranberries and Strawberries, we also added a sprig of mint, fresh fruit and a sprinkle of icing sugar.
NICE CREAM CAKE CHRISTMAS PUDDING
MAKE TIME: 6 hrs (includes freeze time)
STRAWBERRY NICE CREAM LAYER
3 cups frozen strawberries
1 frozen banana
½ cup almond milk
1 tsp Morlife Monk Fruit Powder
LUCUMA VANILLA NICE CREAM LAYER
½ cup coconut cream
6 frozen bananas
½ cup Morlife Certified Organic Lucuma Powder
1 tsp vanilla extract
½ cup coconut oil, melted
¼ cup Morlife Certified Organic Cacao Powder
2 tbsp Morlife Certified Organic Lucuma Powder
½ cup Morlife Dried 5 Berry Mix
handful fresh strawberries & blueberries
sprig of mint
STEP BY STEP
- Line a large bowl with glad wrap.
- In a food processor, blend the Strawberry nice cream ingredients together until smooth and creamy. Pour into the lined bowl and freeze for 1 hour.
- Blend the Lucuma Vanilla nice cream ingredients together in a food processor until smooth and creamy, pour on top of the strawberry layer. Freeze for 4 hours or overnight.
- Make the chocolate drip by combining the ingredients together in a Pyrex jug, stirring until dissolved.
- Take the nice cream cake pudding out of the mould and place on a large plate removing the glad wrap. Pour over the chocolate drip while still warm and the nice cream still cold. Garnish with Morlife 5 Berry mix, fruit and mint then sprinkle with icing sugar.
