You Can Now Enjoy Your Mac N Cheese Fix With This Plant Based Recipe

We’re a huge fan of Mac & Cheese at Morlife (who isn’t?!), so we decided to recreate a recipe for everyone to enjoy. Behold… our vegan version of Mac & Cheese using zucchini noodles, we present Zuc & Cheese!

You’re going to love how simple this is to make and will be an awe by how amazing it tastes! AND you’re getting in your dose of vegetables!

The key to creating the perfect Mac N Cheese is the cheese and creaminess! We’ve accomplished that by creating a vegan cheese using cashews, nutritional yeast and lemon juice recreating that mouth-watering savoury flavour. For the creaminess, we’ve used a combination of our Coconut Water Powder, potato and cashews plus seasonings and spices for that perfect Mac N Cheese flavour!

Prior to starting the recipe, you’ll need a spiralizer. They can be picked up at most home ware stores, and if not, a grater would do fine (plus it would give you fettuccini type zucchini).

Start by boiling the onion and potatoes to soften them, this will allow them to blend easily for a creamy texture. 10 minutes should be enough then make sure you drain the excess water before placing them into a blender.

Now for the fun part! Blend all the remaining ingredients together until you have that perfect creamy and smooth texture. Plate up by pouring the cream over the zucchini noodles, mix the sauce through and serve with parsley.

VEGAN 'ZUC & CHEESE' 

PREP + COOK TIME: 1.5 hrs

SERVES: 2-4

INGREDIENTS

6 medium zucchinis, spiralized

½ brown onion, chopped

½ peeled potato, chopped

½ cup raw cashews (soaked in hot water for 30 mins then drained)

1 tbsp Morlife Coconut Water mixed in 1/3 cup water

1 tbsp lemon juice

1 tsp Himalayan Salt

1 tsp garlic powder

¼ tsp black pepper

1/8 tsp smoked paprika

1/8 tsp Morlife Certified Organic Turmeric Powder

1/8 tsp nutmeg

2 tbsp Nutritional yeast flakes

1 bunch fresh parsley, to serve

 

STEP BY STEP

  1. Place onion and potatoes in a pot of boiling water, cook for 10 minutes until vegetables soften.
  2. Place spiralised zucchini noodles into a large bowl, set aside.
  3. Using a strainer, strain the vegetables to ensure most of the water has gone.
  4. Place into a blender with all remaining ingredients (apart from zucchinis and parsley). Blend until smooth and creamy then pour into the bowl with zucchini noodles and mix the sauce through.
  5. Plate the ‘Zuc’ & Cheese up and serve with fresh parsley.

*NOTE: Although no dairy is added to this recipe, our Morlife Coconut Powder has trace milk solids in there. You can omit this if you wish, however it gives a creamy consistency to the dish.
