Red velvet quinoa pancakes

1/3 cup Morlife Certified Organic Quinoa Flakes

1/3 cup cornflour

1 tbsp. coconut sugar

1 tbsp. Morlife Beetroot powder

125mL almond milk

1 egg

1 tsp. vanilla essence

1 banana

1 tbsp. coconut oil


TOPPING:

Sugar free chocolate (melted)

Fresh blueberries, raspberries or your favourite fruit

Directions

1) In a food processor, grind the Quinoa Flakes into fine flour, place into a large bowl and add cornflour, the sugar and beetroot powder. Set aside.

2) Combine the remaining ingredients into a food processor and process until smooth. Combine the wet and dry mixtures together and stir well.

3) Heat a large saucepan with coconut oil. Pour the batter onto the pan (1/4 cup at a time) using a pancake mould. Cook until both sides are golden. Drizzle with melted chocolate and garnish with fresh blueberries.
